Breakfast in bed: Autumn edition

We’ve pulled together two of our favourite Autumnal breakfast recipes that in our opinion, are best enjoyed when still in bed...

As the cold weather creeps in, so does the temptation to spend cosy mornings wrapped up in a duvet. Well, what makes a cosier morning than breakfast in bed, especially when the breakfast is Apple and Cinnamon Pancakes, and a seasonal Pumpkin Spiced Smoothie!

APPLE AND CINNAMON PANCAKES

The perfect combination of sweet and spiced, topped with sticky maple syrup and soft apple pieces, these pancakes are the best way to start an Autumn day.

Prep time: 10-15 minutes

Makes: 12 pancakes

You will need:

Pancakes

  • 1 ½ cups of milk
  • 1 egg
  • 2 tsp vanilla extract
  • 2 cups self-raising flour
  • ¼ tsp bicarbonate of soda
  • 1/3 cup caster sugar
  • 25g butter, melted
  • 2 tsp ground cinnamon
  • 1 granny smith apple, peeled and grated
  • 2 tbsp brown sugar

Topping

  • 2 tbsp butter
  • 2 apples, peeled, cored and diced
  • 2 tbsp brown sugar
  • ½ teaspoon cinnamon
  • 1/3 cup maple syrup

Method:

Step 1

Whisk together your milk, egg and vanilla extract in a jug. Sieve your flour and bicarbonate of soda into a bowl, then stir in the sugar.

Make a well in the centre of the dry mixture, and add the milk mixture. Whisk this until just combined, then stir in the cinnamon, grated apple and sugar.

Step 2 

Heat a large, non-stick frying pan over medium heat, and spray with cooking spray or brush with butter. Using a ¼ measuring cup, add your batter to the pan.

Allow each pancake 2 to 3 minutes to cook, or until bubbles appear on the surface and the edges begin to ‘dry’. Then, flip or use a spatula to turn over your pancake and repeat the time again until the pancake is cooked through.

Step 3

Add your chopped apple, brown sugar, butter and cinnamon to a medium pan. Stir over a medium heat for 3 to 5 minutes, until the apples are very tender. Stir into your syrup and pour the topping over the warm pancakes.

PUMPKIN SPICED SMOOTHIE

Autumn is the official season of the pumpkin spice craze, so why not bring that craze into your breakfast? This creamy Pumpkin Smoothie is a warming way to kick-start your Autumn morning.

Prep time: 5 minutes (If using shop bought pumpkin puree)

Makes: One smoothie

You will need:

  • 1 banana
  • 3/4 cup vanilla yogurt
  • 1/2 cup pumpkin puree (shop bought or homemade)
  • 1/4 cup oats
  • 1 tbsp honey
  • A pinch of cinnamon
  • A pinch of ground ginger

To do:

After chopping your banana, blend all ingredients together until smooth. If too thick, add a few tbsp of milk or water.

Add or leave out the honey to adjust the sweetness to your taste.

Pour into a glass, add a straw, and/or add a garnish.
