Breakfast in Bed: French Toast with Strawberries

We can't think of a better way to enjoy the best of British Summer strawberries, than with French Toast and Ricotta (while still in bed, of course!)


As we enjoy the sunshine, the warm air and the low-tog duvet, we can’t help but think that the Summer mornings call for a fresh, fruity breakfast to help us start the day right. For the perfect balance of light yet filling, we’re sharing our favourite French Toast recipe that also makes the most of the in-season and beautifully sweet British strawberries.



The perfect breakfast treat with ricotta, strawberries and a generous drizzle of honey, this French Toast recipe will satisfy any sweet tooth this Summer!

Prep time: 10 minutes

Serves: 2

You will need:

  • 1 large egg
  • 300ml milk (semi-skimmed)
  • 1 tsp vanilla extract
  • 4 slices of thick-cut white bread
  • Butter to coat the pan twice (approx two tbsp)
  • Sweet British strawberries (approx 10-15)
  • A small handful of mint leaves (torn up/shredded to flavour)
  • 50g ricotta
  • Honey (to taste- approx 2-3 tbsp)


Step 1

In a mixing bowl, beat together your egg, vanilla extract and milk.

Then, place your slices of bread on a baking tray/large plate, and soak in the mixture for a few minutes. Tip: place each piece of bread on its own piece of parchment paper on top of your tray before soaking- this allows each slice to be lifted from the tray and slid into your pan with ease and prevents the soaked bread from falling apart.

Step 2

Take approximately 1 tbsp of your butter and melt it in a non-stick frying pan over a medium heat. Once hot, add two slices of your bread, being careful not to let each slice fall apart (if you didn’t follow the tip above, a fish slice or spatula could come in handy here.

Leave your bread to cook for 4-5 minutes until golden brown, checking regularly to prevent burning, then flip and repeat the process.

Transfer your cooked slices onto a plate, then melt another tbsp of butter in your pan and begin again with the other two slices of bread.


Step 3

Cut your toast in half on the diagonal and spread a coating of ricotta on each piece, then arrange on your plate and drizzle across honey to taste. Last but not least, half or quarter your strawberries and arrange them over your toast, then finish off with a sprinkling of torn/shredded mint leaves.


Et voilà!

Pop your French Toast on a breakfast tray with your favourite early morning drink and you’re ready to enjoy the perfect Summer breakfast in bed. Best paired with a bright, sunny morning and a day off work…
